Where we are
Capoponte is a small village not far from Tizzano Val Parma, located 400 mts high, on the hills surrounding Parma.
We are inside the “Unesco Man & Biosphere Reserve of Tosco-Emiliano Apennine,” just outside the “100 Lakes” Natural Park, on the ancient “Salt Path”.
This is a piece of historical evidence that links our land to the ancient tradition of ham production.
Our village is a crossroad between two rivers, Parma and Parmossa rivers. This is very important because the rivers facilitate the airflow from the southwest: the “Marino” breeze is essentials for the natural seasoning of parma ham.
Parmesan hills air is fragrant and dry: the “Marino” wind blowing from Versilia, on the Tyrrhenian coast, enriches the perfume of pinewood and chestnut trees of the Appennini Mountains This is the secret of the perfect microclimate which give a unique taste to our ham.
